Ingredients
- 11/2 cup or 200 gm broccoli florets
- 1 medium sized potato, diced
- 2 garlic cloves
- 8 Cashews, chopped
- 1 3/4 cup water
- 1 tsp butter
- Salt to taste
Method
Heat a pan. Add garlic cloves, diced potato, 1 cup of water and salt to taste.
Cover and cook until potato is 3/4th cooked.
Add brocolli florets and cashews. Cover and cook for 8 minutes.
Remove from heat and allow to cool down.
Transfer to a blender and grind to a smooth paste.
Heat a pan. Add 1 teaspoon of butter.
Once the butter is melted, add the puree and 3/4 cup water.
Add salt if required.
Remove from heat once it starts boiling.
Serve this healthy soup warm.
