Pineapple Cake

Pineapple Cake

This moist and fluffy pineapple fruit cake is made with fresh pineapple and is easy to make at home.

Ingredients

  • 400g chopped pineapple(fresh or canned)
  • 140g white granulated sugar
  • 140g (1 cup + 2 tbsp) plain flour
  • 2 tsps baking powder
  • 1/8 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp salt
  • 2 medium eggs
  • 1/2 cup vegetable oil
  • 2 tsps pineapple essence

Method

1) Take 400g finely chopped pineapple in a pan. Add 1/3 cup sugar. Mix well and cook until the water completely evaporates. Remove from heat and allow to cool down.

2) Take 140g plain flour, 2 tsps. baking powder, 1/8 tsp salt, 1/4 tsp ginger powder and 1/8 tsp nutmeg powder in a bowl. Mix well and keep aside.

3) Crack open 2 medium eggs in a bowl. Add 1/2 cup vegetable oil, 1/3 cup granulated sugar and 2 tsps. pineapple essence. Beat well using an electric beater.

4) Add the dry mix into the wet mix and beat just until combined.

5) Finally, add the cooked pineapple and mix using a whisk or blender.

6) Transfer to a lined and greased loaf tin(8 1/2″).

7) Bake in a preheated oven at 180°C for 50-60 mins or until skewer inserted comes out clean.

8) Allow to cool down completely before slicing.
