It is a healthy eggless cake made with banana, carrot and oats and uses very little oil. A moist cake which can be eaten guilt free.
Ingredients
- 3 well ripe bananas
- 1 cup grated carrot(squeezed)
- 1/3 to 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 cup oats or oats flour
- 1 cup self raising flour/plain flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla essence
- 1 tsp cinnamon powder
- 1/8 tsp nutmeg powder
- 1/4 tsp salt
- 2 tbsp. plain yogurt
Method
1) Mash 3 bananas with fork. Add 1/2 cup sugar(you can adjust according to the sweetness of banana), 1/4 cup oil, 1/4 tsp salt and 2 tsp vanilla essence. Beat until well combined.
2) Powder 1 cup oats into fine powder.
3) Sieve in the oats flour, 1 cup self raising flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon powder and 1/8 tsp nutmeg powder into the wet mixture. Mix just until combined.
4) Add 1 cup grated carrot(squeeze out the excess water before adding into the cake mix) and 2 tbsp yogurt. Gently fold the carrot into the batter.
5) Transfer to a loaf tin. Tap 3 times.
6) Bake in a preheated oven at 180°C for 50-60 minutes or until skewer inserted comes out clean.
7) Allow to cool down completely.
