INGREDIENTS
- 150g unsalted butter
- 200g dark chocolate
- 1 tsp instant coffee powder
- 20g (1/4 cup) cocoa powder
- 2 tbsp vegetable or sunflower oil
- 1 tsp vanilla extract
- 1/4 tsp salt
- 225g ( 1 1/4 cups) light brown sugar (powdered)
- 3 medium eggs
- 130g (1 cup + 1 tbsp) plain flour
- 50g (1/4 cup) + 10g dark chocolate chips
Method
Take 150g unsalted butter, 200g dark chocolate and 1 tsp instant coffee powder in a glass or stell bowl.
Melt the butter and chocolate using the double boiling method. You can also use microwave.
Once it is melted, add 20g cocoa powder, 2 tbsp vegetable oil, 1 tsp vanilla extract and 1/4 tsp salt. Mix well.
Add 225g powdered brown sugar. Mix it will.
Add 3 eggs to the bowl and beat really well for couple of minutes until the sugar is dissolved and everything is well combined.
Add 130g plain flour and mix gently using a spatula or a whisker.
Add 50g chocolate chips and mix genlty.
Transfer to a 24 x 24 cm baking tin (greased and lined). Sprinkle few more chocolate chips on top.
Bake at 170°C for 30-35 minutes in a preheated oven. Allow to cool down.
Clean the knife in between slicing for a perfect clean slice of brownie.
