Creamy Mint & Peas Soup

Ingredients

  • 2 1/2 cups fresh/frozen green peas
  • 5-6 mint leaves
  • 2 1/2 cups water
  • 1/2 onion, sliced
  • 4 garlic cloves
  • 1/3 tsp black pepper powder
  • 8 cashews, chopped
  • 2 bay leaves
  • Salt to taste
  • 1 tsp butter
  • 4 tsps fresh cream (optional)

Method

1. Heat 1 tsp of butter in a pan.

2. Add 4 garlic cloves, 1/2 onion sliced and 2 bay leaves. Saute for 2 mins.

3. Add 8 cashews, chopped and 2 1/2 cups green peas(fresh/frozen). Saute for 5 mins.

4. Pour in 2 1/2 cups water and salt to taste. Cover and cook for 10-15 mins.

5. Remove from heat and allow to cool down.

6. Remove the bay leaves.

7. Blend the peas along with the water and mint leaves until smooth and creamy.

8. Transfer to a pan. Add 1/3 tsp black pepper powder. Mix well.

9. Bring to boil.

10. Remove from heat and serve.
