Cream of Mushroom soup

Ingredients

  • 300g Mushroom sliced
  • 1 tsp garlic paste
  • 1 small onion chopped
  • 1 tbsp celery chopped (optional)
  • 2 tbsp spring onion chopped
  • 1/2 tsp black/ white pepper powder
  • 1 tbsp plain flour/maida/ all purpose flour
  • 2 1/2 cup boiling water
  • 3/4 cup or 150 ml single cream
  • 1 tbsp butter
  • Salt to taste

Method

Heat 1 tbsp of butter in a pan.

Add garlic paste and onion and saute for a minute.

Add chopped spring onion and celery. Saute for a minute.

Add sliced mushrooms and 1/2 tsp pepper powder. Mix well and cook until the mushrooms are soft.

Add 1 tbsp of plain flour and stir to combine. Remove from heat.

Allow it to cool down.

Transfer 3/4th of the cooked mushrooms to a blender and puree it. Transfer back to the pan.

Add 2 1/2 cups of boiling water. ( You can add vegetable/chicken stock instead of water.)

Once the mixture starts boiling, reduce the flame and add 3/4 cup single cream.

Mix well and simmer for a minute (Do not boil. )

Remove from heat and serve hot.
