Chocolate Chip Pumpkin Bread

Ingredients

  • 1 1/2 cups plain flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp allspice
  • 1/4 tsp ginger powder
  • 1/8 tsp nutmeg powder
  • 2 eggs
  • 3/4 cup sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 tsp vanilla essence
  • 1/2 cup grated chocolate
  • 3 tbs chocolate chips (optional)

Method

1) Take 1 1/2 cups plain flour in a bowl.

2) Add 1/2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp cinnamon powder, 1/4 tsp allspice, 1/4 tsp ginger powder, 1/8 tsp nutmeg powder and 1/2 tsp salt.

3) Mix everything well and keep aside.

4) Add 2 eggs and 3/4 cup sugar to a large bowl.

5) Mix well using a hand whisk.

6) Add 1/2 cup vegetable, 1 tsp vanilla essence and 1 cup pumpkin puree. Mix well until well combined.

7) Seive in the dry mix and gently mix with a spatula until well combined.

8) Add 1/2 cup grated milk chocolate and gently fold it in. Do not overmix.

9) Transfer to a lined and greased loaf tin.

10) Bake in the oven at 170°C for 45-50 minutes. (To avoid browning, if required, place an aluminium foil on top.)
