Fruit & Nut Flapjack

Flapjack is a baked bar made with rolled oats, brown sugar, butter and golden syrup. Adding dried fruits and nuts into the flapjack mix makes it more crunchy and chewy at the se time. You can have it as a snack, energy bar, breakfast bar or even as a dessert.

Ingredients

  • 250g (2 1/2 cups) rolled oats
  • 90g (1/3 cup) golden syrup
  • 90g (1/2 cup + 1/4 cup)brown sugar
  • 125g unsalted butter
  • 1/2 cup dried fruits & nuts(mixed)
  • 1/4 tsp salt

Method

1. Dry roast rolled oats for 5 mins or until we get a nice aroma. ( I use 1 cup of jumbo oats and 1 1/2 cups of broken oats.)

2. Transfer to a large bowl.

3. Add 1/2 cup chopped mixed nuts and fruits to the bowl. Give it a mix. (I used dried cranberries, cashews and pistachios)

4. Take 125g unsalted butter, 90g brown sugar and 90g golden syrup and pinch of salt in a saucepan. In medium heat, cook until the sugar melts. Do not over boil as it will make the flapjack hard.

5. Remove from heat. Pour on top of the oats. Mix until the oats is well coated with butter-sugar mix.

6. Transfer to a lined and generously greased square/rectangular tin. Press the mixture into the corners. Press with the back of a spoon so that it is packed tightly.

7. Bake in the oven at 180°C for 30-35 mins.

8. Allow to cool down completely.

9. Slice into squares and enjoy.
