Ingredients
- 2 1/2 cups plain flour
- 1/2 cup unsweetened cocoa powder
- 2 tsps baking powder
- 1 tsp baking soda
- 1/3 tsp salt
- 2 cups sugar
- 1 cup vegetable oil
- 2 eggs
- 1 tsp vanilla essence
- 1 cup yogurt
- 2 tbs instant coffee
- 1 tbs distilled vinegar
Method
Blend 2 cups sugar, 2 eggs, 1 cup oil and 1/3 tsp salt. Keep aside.
Seive 2 1/2 cups plain flour, 2 tsps baking powder, 1 tsp baking soda and Cocoa powder. Add half of this dry ingredients to the wet mixture. Blend well using a blender or electric beater.
Add 1 cup yogurt and 1 tbs vinegar and mix well.
Add the remaining dry ingredients and mix until well combined.
Add 2 tbs instant coffee (to make this, add 1 tbs instant coffee powder to 2 tbs hot water) and 1 tsp vanilla essence and mix well.
Transfer to a lined and greased cake tin. Tap 3-4 times.
Bake in the preheated oven at 170°C to 35-40 mins or until the skewer inserted comes out clean.
Allow to cool down.
Top with easy chocolate frosting.
Slice and enjoy.
