Ingredients
- 100g cashews
- 150g or 1 1/4 cup plain flour
- 100g or 1/2 cup granulated sugar
- 5 cardamom
- 110g unsalted butter, room temperature
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1 tsp vanilla essence
Method
1) Powder 1/2 cup sugar along with 5 cardamom.
2) Beat 110g unsalted butter until soft. Add the powdered sugar into it and beat again until well combined.
3) Add 1/8 tsp salt, 1/4 tsp baking powder, 1 tsp vanilla essence and 1 1/4 cups plain flour.
4) Crush 100g cashew and add into the flour mix. No need to powder the cashew.
5) Beat everything together just until well combined.
6) Divide into 20-22 small balls and place on a baking tray keeping some distance.
7) Gently press each balls with your fingers to flatten it slightly.
8) Place cashew on each ball. You can also sprinkle some sugar on each.
9) Bake in the preheated oven at 160°C for 20-25 mins.
10) Allow to cool completely. Cookies will be soft when it is out from the oven. It will harden when it cools down.
