Anzac Biscuit/Oats Biscuit

Ingredients

  • 1 cup rolled oats
  • 1/2 cup plain flour
  • 1/4 cup whole-wheat flour
  • 1/2 cup desiccated coconut
  • 1/2 cup brown sugar
  • 2 tbsp golden syrup
  • 2 tbsp water
  • 1/4 cup vegetable/rice bran oil
  • 1/8 tsp salt
  • 1 tsp baking powder

Method

1) Take 1 cup rolled oats, 1/2 cup plain flour, 1/4 cup whole-wheat flour, 1/2 cup desiccated coconut and 1/2 cup brown sugar in a bowl. Mix well and keep aside.

2) In a bowl, add 2 tbsp golden syrup, 2 tbsp water and 1/4 cup oil. Mix well and microwave for 30 seconds. Add 1/8 tsp salt and 1 tsp baking powder to this. Mix until foamy.

3) Pour the wet mixture into the dry mixture and mix until well combined.

4) Divide the mix into 12-14 small balls and place on a lined and greased baking tray maintaining space in-between.

5) Flatten each balls with your hands keeping the space between each.

6) Bake in a preheated oven at 180°C for 10 minutes.

7) Allow to cool down completely and enjoy. (It will be soft when it is out from the oven, but it harden as it is cooled down. So do not overbake.)

Notes

You can dry roast the oats for more nutty flavour.

Golden syrup can be substituted with honey.
