Ingredients
For cooking rice
- 1 cup Basmati rice
- Salt to taste
- 1 tbsp vegetable oil
- Water
For frying Chicken
- 400g boneless chicken diced
- 2 tbsp vegetable oil
- 1 tsp of black pepper powder
- 1 tbsp soya sauce
- 1 tsp kashmiri chilli/paprika powder
For fried rice
- 4 cloves of garlic, finely chopped
- 2 tbsp spring onion white, chopped
- 1/4 cup celery, chopped
- 1/3 cup carrot(1 medium sized), chopped
- 1/4 cup cabbage, chopped
- 1/4 cup beans, chopped
- 1/4 capsicum, chopped
- 1/4 cup spring onion greens, chopped
- 1 tsp white/black pepper powder
- 1 tbsp vinegar
- 1 tbsp soya sauce
- 2 tbsp vegetable oil
- salt to taste
Method
Cook 1 cup of basmati rice as per the instruction in the package. Add salt and oil while cooking rice.
Drain the rice and allow it to cool down completely.
Heat 2 tbsp of oil in a pan. Add chicken, 1 tsp kashmiri chilly /paprika powder, 1 tsp pepper powder, 1 tbsp of soya sauce and salt to taste. Mix well.
Cook until the chicken is cooked completely and is slightly golden. Remove from heat and keep aside.
In a large pan, heat 2 tbsp vegetable oil.
Add the chopped garlic and spring onion whites. Saute for a minute.
Add 1 chopped carrot, 1/4 cup chopped celery and 1/4 cup chopped beans.
Saute until vegetables turns crisp.
Add 1/4 cup cabbage, 1/4 capsicum and 1/4 cup spring onion greens. Saute for 5 minutes.
Add 1 tbsp of vinegar, 1 tbsp soya sauce , 1 tsp pepper powder and salt to taste.
Add the fried chicken and the rice. Mix gently using a fork to avoid the breakage of rice.
Stir fry for 5-10 minutes. Remove from heat and garnish with some spring onion greens.
