Cauliflower Egg Thoran

Ingredients

  • 350g Cauliflower
  • 2 eggs
  • 1/2 cup grated fresh/desiccated coconut
  • 1 onion, chopped
  • 2 green chillies, chopped
  • 1/3 tsp turmeric powder
  • 1/2 tsp kashmiri chilli powder
  • few curry leaves
  • 1 tsp mustard seeds
  • salt to taste
  • 2 tbsp coconut/vegetable oil

Method

1) Thinly slice the cauliflower using a grater.

2) Heat a pan. Add 2 tbsp oil. Splutter 1 tsp mustard seeds.

3) Add few curry leaves, 1 finely chopped onion and 2 finely chopped green chillies. Sauté for a minute.

4) Reduce heat to medium. Add 1/2 tsp kashmiri chilli powder and 1/3 tsp turmeric powder. Sauté for 10 seconds until the raw smell is gone.

5) Add the grated cauliflower, 1/2 cup grated coconut and salt to taste. Mix well. Cover and cook for 4-5 minutes.

6) Make some space in the middle of the pan by keeping the cauliflower to the sides of the pan.

7) Add 2 beaten eggs. Let it cook for 1-2 minutes.

8) Scramble the eggs well and mix everything together.

9) Remove from heat. Serve with rice or roti.
