Apple Banana Cake

A warm, cozy, and incredibly soft Apple Banana Cake that fills your kitchen with the aroma of caramelised apples and cinnamon. This is one of my favourite comfort bakes — simple, moist, and full of flavour. It never disappoints!

Ingredients

For the Cooked Fruit Mixture

  • 2 apples, chopped with skin
  • 25 g unsalted butter
  • ¼ cup brown sugar
  • ¼ tsp cinnamon powder
  • 2 ripe bananas, chopped

For the Cake Batter

  • 50 g unsalted softened butter
  • 90 g sugar powdered sugar
  • 2 eggs
  • 1 tbsp vanilla essence
  • ¼ tsp salt
  • 1 cup plain flour (120 g)
  • ¼ tsp cinnamon powder
  • 1¼ tsp baking powder

Optional

  • Powdered sugar for dusting

Instructions

Step 1: Cook the Fruit

  1. In a pan, add the chopped apples with 25 g unsalted butter, ¼ cup brown sugar, and ¼ tsp cinnamon powder.
  2. Mix well and cook uncovered until the apples are about 80% cooked.
  3. Turn off the heat and add the two ripe bananas.
  4. Mix and set aside to cool completely.

Step 2: Prepare the Batter

  1. In a large bowl, cream together the softened butter, 90 g powdered sugar, until light and fluffy.
  2. Add the eggs, beating well until smooth.
  3. Mix in the vanilla essence and salt.
  4. Add the flour, cinnamon powder, and baking powder. Fold gently using a spatula.
  5. Add ¾ of the cooled fruit mixture into the batter and fold it in.

Step 3: Bake

  1. Transfer the batter to a lined baking tin.
  2. Spread the remaining fruit mixture on top.
  3. Bake in a preheated oven at 180°C for 50–55 minutes, or until a skewer inserted in the center comes out clean.
  4. Once slightly cooled, dust with powdered sugar if desired.

Note

  • This cake turns out incredibly soft and moist because of the cooked fruit blend.
  • You can serve it warm or at room temperature.
  • Store leftovers in an airtight container for 2–3 days.
