Season the aubergine slices with salt. Keep it aside.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/foodtocherish.files.wordpress.com\/2020\/07\/img_20200706_192555.jpg?w=640\" alt=\"\" class=\"wp-image-292\"\/><\/figure>\n\n\n\n<p>2. In a small bowl, add 4 tablespoons of tomato ketchup, 1\/3 teaspoon of Oregano and 1\/3 teaspoon of basil and salt to taste. Mix well and keep aside.<\/p>\n\n\n\n<p><strong>Without Oven<\/strong><\/p>\n\n\n\n<p>1. Heat 1 tablespoon of oil in a pan. <\/p>\n\n\n\n<p>2. Cook the aubergine slices for 5 minutes on each side on medium heat.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/foodtocherish.files.wordpress.com\/2020\/07\/img_20200706_193243.jpg?w=640\" alt=\"\" class=\"wp-image-288\"\/><\/figure>\n\n\n\n<p>3. Reduce the heat to low. Apply the tomato ketchup mixture on each aubergine slices.<\/p>\n\n\n\n<p>4. Top each slices with mozzarella cheese, capsicum and olives.<\/p>\n\n\n\n<p>5. Cover and cook for 5-6 minutes. <\/p>\n\n\n\n<p>6. Turn off the heat. Arrange the aubergine slices on a baking tray (lined with parchment paper).<\/p>\n\n\n\n<p>2. Smooth the tomato ketchup mixture on the aubergine slices.<\/p>\n\n\n\n<p>3. Top with the mozzarella cheese, capsicum and olives.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/foodtocherish.files.wordpress.com\/2020\/07\/img_20200706_193232.jpg?w=640\" alt=\"\" class=\"wp-image-287\"\/><\/figure>\n\n\n\n<p>4.
